i heart pumpkins.


tonight zach had guy time and i did some supremely fall things.  i ran home from work so z and i could have a quick dinner of chicken corn chowder over biscuits (YUM) and then he headed out for the night.  i took one look at the giant pumpkin on my desk and thought: tonight, you're mine pumpkin! 
i wanted to do something different than the typical jack-o-lantern so i pulled out my yarn and started wrapping the pumpkin.  i then cut some blocks and triangles out of the top to let the light shine out.  i used a vanilla pumpkin candle on the inside to get the pumpkin smell in the house too!  But the best part?  THE ROASTED PUMPKIN SEEDS!  this is my dream snack. 

(i like how it kind of looks like a cheeseburger!)




i have a special method for quick pumpkin seeds:
rinse the seeds in cold water
add seeds to a pot and bring to a boil
**important: add a good amount of salt to the water before boiling
let simmer for 5 minutes
drain seeds
lay out on a roasting pan that has been drizzled with olive oil

roast for 20 minutes at 400 degrees.
PERFECTION.
